Adjust Servings:
2 yellow or red Sweet bell peppers
1 pack Cherry tomatoes
2 medium-sized Zucchini
3 tablespoons Olive oil
1/2 teaspoon Garlic paste
2 teaspoons Italian spice mix
To taste Salt and pepper
1/2 teaspoon Paprika
4 tablespoons gluten-free Breadcrumbs
1 pack Vegan chicken I used Shefu tofu, but you can use any type of firm tofu, even plain
2 teaspoons Vegan mayonnaise Optional

This scrumptious gratin is a real meal fixer for when you don't have much time to cook and you want to keep it healthy.

This easy-to-make dish will save your day and is really scrumptious!

The main ingredients are zucchini, sweet bell peppers, and cherry tomatoes. Dice them into small cubes, coat them with a mix of olive oil, garlic paste, Italian herbs, and breadcrumbs, and put in the oven for 30 minutes.

In the meanwhile, grill the vegan chicken. If you don’t have similar-chicken choices, you can as well use plain tofu, lightly seasoned with salt and pepper. Here, I have used unflavoured Shefu tofu.

Serve with vegan mayo or your favourite sauce and your dinner is fixed!

Slice and dice

Pre-heat the oven to 400 degrees. Rinse well your vegetables. Quarter and core the peppers, chop off the zucchini's ends and discard them. Dice the zucchini and peppers into small cubes, then halve the cherry tomatoes.

Coat the veggies

In a ramekin, mix together the olive oil, garlic, salt, pepper, paprika, and Italian spice mix. Transfer the diced vegetables to a baking dish, then brush them with the aromatic oil. Finally, sprinkle them with breadcrumbs, and mix them with your hands to coat them well.

30 minutes


Transfer the baking dish to the oven and bake for 30 minutes.

10 minutes

Grill the vegan chicken

Ten minutes before the end of the timer, heat the grilling pan and grill your vegan chicken on all sides for a couple of minutes.



Take the vegetables out of the oven and transfer to the serving plates while well hot. Accompany with the grilled vegan chicken and a teaspoon of vegan mayo or your favourite sauce. Enjoy!
