Tomato-and-flaxseed Open Toast
This is an idea for a speedy, light and tasty breakfast. Inspired by Italian bruschetta, this tomato-and-flaxseed open toast is made of toasted wholewheat bread, sliced Italian tomatoes, walnut oil, and flaxseed as a topping.
If you feel brave enough, you can rub some fresh garlic on the bread after toasting (as you would do with bruschetta) instead of using garlic salt.
However, consider your colleagues and the people you will interact with later during your day: garlic breath can affect your social interactions!
- 4 slices of wholewheat bread
- 2 Italian tomatoes
- Walnut oil, to taste
- Pinch of garlic salt
- Pinch of flax seeds
- Pinch of flaxseed meal
Rinse and thinly slice the tomatoes. Toast the bread slices to your liking. Drizzle with walnut oil and then lay the tomato slices on top. Sprinkle with garlic salt, flax seeds, and flaxseed meal. Drizzle with walnut oil again and you’re good to go!
