Vegan Sausage and Broccoli Rice
Sausage and broccoli are a great combination for a creamy, rustic rice. This dish is filling and comforting, perfect for cold winter days. There are several ways of preparing it – some prefer to cook the rice and the condiment separately – but I prefer the one-pot solution described below. This way, the ingredients will blend together and give more flavor to the rice.
Vegan sausage and broccoli rice is a complete meal, with carbs, vegetables, and proteins, all packed in a single meal.
- 2 cups broccoli florets
- 1 white onion
- 1 vegan sausage
- 7-8 cherry tomatoes
- 1 cup Arborio rice or sushi rice
- 1 teaspoon vegetable powder
- Salt and pepper, to taste
- Red chili flakes, to taste
- 1 tablespoon olive oil
- 1 tablespoon vegan Parmesan-like cheese
Rinse the broccoli head and cut off all the florets. Peel and dice the onion. Rinse and halve the cherry tomatoes. Peel the skin off the vegan sausage and slice it into rounds.
Heat a little olive oil in a large skillet and add the onion, cherry tomatoes, and sausage slices. Season with salt, pepper, and chili flakes. Cook for 2-3 minutes. Add the broccoli florets and cook for another 5 minutes. Add the rice and mix well to toast it for 1 minute. Then, add a cup of water and vegetable powder. Turn the heat to medium and cook until the rice is soft, adding a little water from time to time if needed.
Transfer to the serving bowls and top with a pinch of vegan Parmesan-like cheese.
